Baldo rice is less known than other traditional risotto rices, but it has excellent consistency and versatility when cooked. It was selected in 1964, two years after Roma, a very similar variety but with a pearl. Baldo rice is in fact the only Italian crystalline risotto rice: it has a compact grain that makes it suitable not only for traditional risottos, but also for preparing rice salads.
