Black rice is a pigmented whole grain rice: its natural black color is due to anthocyanins, powerful antioxidants also found in red fruits, present on the outer part of the grain. In addition to having a low glycemic index, thanks to the presence of fiber, it has excellent nutritional characteristics, such as vegetable lipids, mineral salts, and vitamins. Not to be confused with "Wild rice" which is not rice but a grass, Zizania aquatica. Its natural aroma is released during cooking and is reminiscent of bread crust. The long cooking times can be shortened by using a pressure cooker: 1 part rice to 2 parts water, cooking for 15 minutes after the whistle. It can be stored in the refrigerator for a few days, maintaining its organoleptic characteristics. Ideal for salads and main courses, black rice can be pre-cooked and then "risotto-style" with chosen ingredients.
