Red rice is a naturally coloured whole grain rice, its hue derived from anthocyanins, powerful antioxidants also found in red fruits. Besides having a low glycemic index, thanks to its fibre content, it boasts excellent nutritional properties, including plant lipids, mineral salts, and vitamins. Not to be confused with "fermented red rice," this whole grain rice is similar to black rice and releases a natural, spicy aroma when cooked. Its long cooking times can be shortened by using a pressure cooker: 1 part rice to 2 parts water, cooked for 15 minutes after the whistle. It can be stored in the refrigerator for a few days, maintaining its organoleptic characteristics. Ideal for salads and one-dish meals, red rice can be pre-cooked and then "risotto-style" prepared with chosen ingredients.
