Roma rice was created in Vercelli in 1962, at the Experimental Rice Cultivation Station, from the cross between two historic Italian rice varieties, Balilla and Razza 77. With large, pearly grains, it has a low amylose content that facilitates creaming, making it ideal for creamy risottos.
